Brown Sugar Instant Oatmeal Muffins

Upgrade breakfast with maple brown sugar oatmeal for a sweet twist.
Ingredients:
  • 3 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 0.25 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 1.75 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 2 packets instant maple and brown sugar oatmeal
  • 1 egg, beaten
  • 1 cup milk
  • 0.25 cup vegetable oil
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a 12-cup muffin tin.
  • Mix 3 tablespoons of flour, brown sugar, and cinnamon in a small bowl. Cut in the butter using a pastry blender or two knives until the mixture looks like coarse crumbs. Set aside.
  • In a large bowl, mix together 1 3/4 cups flour, white sugar, baking powder, salt, and instant oatmeal. Create a well in the center of the mixture and add the egg, milk, and oil. Gently mix until just combined. Fill muffin cups 2/3 full with batter and generously sprinkle streusel topping over each muffin. Enjoy!
  • Bake in a warm oven until a toothpick inserted in the center of the muffin comes out clean, approximately 15 minutes. Let them cool on a wire rack for 5 minutes before serving.
