Brownie Batter Cheesecake Bars

Indulgent brownie cheesecake with chocolate crust and silky ganache topping - a chocolate lover's dream!
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs called for on box for cakelike brownies
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup sugar
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups semisweet chocolate chips
  • 3/4 cup heavy whipping cream
  • 1/4 teaspoon fine sea salt, if desired
Instructions:
  • Preheat your oven to 325°F and generously coat the bottom of a 13x9-inch pan with cooking spray.
  • Prepare the brownie batter as instructed on the box for a cakelike consistency. Set aside 1/2 cup of batter, cover it, and refrigerate for later. Spread the rest of the batter in the pan and bake for 22 to 25 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out clean. Let it cool for 10 minutes before serving.
  • In a large bowl, use an electric mixer on medium speed to smoothly beat the cream cheese. Mix in the sugar until everything is smooth. Add 1/2 cup reserved batter, 2 tablespoons of whipping cream, and vanilla, then beat until the mixture is smooth. Lastly, add the 2 eggs and beat until just blended. Spread this mixture evenly over the cooled crust.
  • Bake for 26 to 30 minutes until the center is firm, then allow to cool for 30 minutes.
  • Begin by placing chocolate chips and 3/4 cup of whipping cream in a medium microwavable bowl. Microwave the mixture uncovered on High for 1 minute, then stir. Continue microwaving for 30 seconds, stirring until smooth. Spread this decadent mixture on top of the cheesecake layer. Chill it in the refrigerator for approximately 4 hours, or until completely cooled. Cut into 6 rows by 4 rows and, for an extra touch, sprinkle some sea salt on top of the chocolate layer before serving.
