Decadent brownie-flavored cookies filled with creamy marshmallow, a delightful twist on whoopie pies using brownie mix.
Ingredients:
  • cooking spray
  • 1 (18.4 ounce) package brownie mix
  • 1 cup chocolate chips
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon multicolored candy sprinkles, or to taste
  • 1.5 cups powdered sugar
  • 0.5 cup unsalted butter, softened
  • 0.5 (16 ounce) tub marshmallow creme
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper and lightly coat a wire rack with cooking spray.
  • Combine brownie mix and flour in a medium bowl, ensuring they are well incorporated. Mix in chocolate chips, oil, and eggs until fully blended.
  • Using a rounded tablespoon, place 20 dollops on the baking sheets. Add candy sprinkles to half of the cookies for a festive touch.
  • Bake in the preheated oven for 9 to 10 minutes. Allow to cool on a sprayed rack for 2 to 3 minutes before cooling completely for about 30 minutes.
  • In a stand mixer bowl with the paddle attachment, mix powdered sugar, butter, and vanilla until light and fluffy, around 4 minutes. Gently fold in the marshmallow creme.
  • Transfer the marshmallow mixture into a spacious zip-top bag and snip a small hole in one corner. Squeeze the filling onto the middle of a plain cookie and sandwich it with another cookie that has sprinkles on top. Repeat with the rest of the filling and cookies.
