Indulgent soft brownie cookies with a crunchy twist of pecans, ready in under an hour for a quick chocolate fix. Enjoy with cold milk or top with ice cream for a decadent treat on the go.
Ingredients:
  • 2 cups chopped pecans
  • 1/2 cup butter, cut into pieces
  • 4 oz unsweetened baking chocolate, chopped
  • 3 cups semisweet chocolate chips (18 oz)
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla
Instructions:
  • Preheat the oven to 350°F and evenly spread the pecans in a shallow, ungreased pan. Bake them uncovered for 6 to 10 minutes, stirring occasionally, until they turn a light brown color. Then, set them aside.
  • In a 3-quart heavy saucepan, gently melt butter, baking chocolate, and 1 1/2 cups of chocolate chips over low heat, ensuring to stir constantly. Once melted, remove from heat and allow to cool.
  • Combine flour, baking powder, and salt in a medium bowl; set aside. In a large bowl, use an electric mixer on medium speed to blend eggs, sugar, and vanilla until well combined. Slowly mix in the flour mixture on low speed. Add the chocolate mixture and mix well. Fold in toasted pecans and the remaining 1 1/2 cups of chocolate chips.
  • Prepare your cookie sheets by lining them with cooking parchment paper. Using a 2-tablespoon scoop, drop dough onto the sheets keeping them 1 inch apart. Bake for 10 minutes. Allow the cookies to cool for 2 minutes before transferring them from the sheets to cooling racks.
