Brownie rocky road

Decadent brownies loaded with irresistible rocky road toppings - a chocoholic's fantasy.
Ingredients:
  • Melted butter, to grease
  • 300g good-quality dark chocolate, finely chopped
  • 160g butter, chopped
  • 155g (3/4 cup) caster sugar
  • 3 eggs, lightly whisked
  • 190g (1 1/4 cups) plain flour
  • 60g pink and white marshmallows, cut in half
  • 80g (1/2 cup) whole unsalted roasted peanuts, chopped
Instructions:
  • Preheat the oven to 180°C. Grease a 16 x 26cm non-stick slice pan with melted butter, then line the base and two sides with baking paper, leaving some overhang.
  • In a medium saucepan over low heat, gently melt the chocolate and butter together, stirring with a metal spoon until smooth. Then, add the sugar and continue to cook, stirring, until the sugar completely dissolves, about 5 minutes.
  • Allow the mixture to cool off the heat for 5 minutes. Mix in the egg and flour until well combined. Add in the marshmallows and peanuts, stirring until fully mixed. Transfer the mixture into the pan and even out the top.
  • Bake for 20 minutes in a preheated oven until a skewer inserted in the center comes out slightly sticky. Let cool and set in the pan for 3 hours before cutting into squares.
