Rocky road brownie

Whip up decadent rocky road brownies with chocolate, marshmallows, and raspberries on top.
Ingredients:
  • 180g unsalted butter, chopped
  • 500g dark chocolate, chopped
  • 180.00 gm brown sugar
  • 161.25 gm caster sugar
  • 28.05 gm desiccated coconut
  • 312.50 ml plain flour
  • 32.50 gm cocoa powder
  • 2 x 150g pkts marshmallows, halved (see Notes)
  • 180g pkt Brand Raspberries (lollies), halved (see Notes)
Instructions:
  • Preheat oven to 170C (150C fan forced). Grease and line a 20cm x 30cm baking pan, leaving overhang on the long sides for easy lifting.
  • Melt butter and 300g of chocolate together in a large saucepan over low heat until smooth. Remove from heat and mix in the sugar. Gradually whisk in the eggs, then stir in the coconut. Add flour and cocoa powder, mix until well combined.
  • Transfer the mixture into the pan. Bake for 30-35 mins or until done. Let it cool in the pan on a wire rack.
  • In a saucepan over low heat, melt the rest of the chocolate. Take off the heat and swiftly mix in marshmallows and candies. Spoon the mixture onto the brownie, spreading evenly and pressing down gently with a spatula. Allow it to cool until firm before cutting into pieces.
