Rocky Road Brownies

Indulge in a decadent fudgy brownie loaded with chocolate, marshmallows, and peanuts reminiscent of classic rocky road ice cream.
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1 cup semisweet chocolate chips
  • 1 1/3 cups miniature marshmallows
  • 1/3 cup chopped peanuts
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Grease the bottom of an 8- or 9-inch square pan with shortening or cooking spray. Prepare brownie batter according to box instructions and mix in 2/3 cup of chocolate chips. Spread the batter in the pan.
  • Follow the brownie box instructions for baking. Once out of the oven, top with mini marshmallows, remaining chocolate chips, and peanuts. For extra gooey marshmallows, cover the pan for 2 minutes with a cookie sheet. Let cool for 2 hours. Cut into 16 squares using a knife dipped in hot water. Store in an airtight container.
