Brussels sprout and orange salad recipe

Whip up a delectable Brussels sprout salad with refreshing orange slices for a burst of flavor!
Ingredients:
  • 200g baby brussels sprouts, halved
  • 15g butter
  • 4.00 gm brown sugar
  • 2 oranges
  • 28.60 gm honey
  • 11.80 gm Dijon mustard
  • 40.00 ml white wine vinegar
  • 60ml olive oil
  • 1/2 small radicchio, leaves coarsely torn
  • 100g baby salad leaves
  • 50g walnut
  • 100g fetta, crumbled
Instructions:
  • Boil the brussels sprouts in a large saucepan for 2 minutes or until tender. Drain thoroughly.
  • In a large frying pan over high heat, melt the butter until it foams. Stir in the sugar until dissolved. Add the Brussels sprouts and cook for 5 mins until caramelised, tossing occasionally. Season to taste and let cool slightly before serving.
  • Zest one vibrant orange with a zester. Peel the orange and slice the flesh thinly.
  • Squeeze the last orange to extract its juice into a jar with a screw-top lid. Add honey, mustard, vinegar, and oil to the jar. Close the lid tightly and shake well to mix. Season with salt and pepper to taste.
  • On a large serving platter, layer the radicchio, salad leaves, orange slices, walnuts, and Brussels sprouts. Top with crumbled feta cheese. Drizzle with dressing and garnish with orange zest before serving.
