Elevate Brussels sprouts with pecans, ginger, and cranberries for a quick and vibrant side dish.
Ingredients:
  • 0.5 pound Brussels sprouts
  • 0.25 cup chopped pecans
  • 0.25 cup orange juice
  • 0.5 cup dried cranberries
  • 1 tablespoon freshly grated ginger
Instructions:
  • Pulse Brussels sprouts in a food processor until shredded.
  • In a skillet, heat olive oil over medium heat. Add shredded Brussels sprouts and cook until slightly softened, about 5 minutes. Reduce heat to low and stir in pecans until fragrant and toasted, about 2 minutes.
  • Incorporate the vibrant orange juice into the Brussels sprouts, then gently mix in the cranberries and ginger. Let the mixture simmer until the juice reduces, about 5 minutes.
