Impress your guests with flavorful low-fat pork skewers in zesty orange-ginger marinade.
Ingredients:
  • 1 cup orange marmalade
  • 1/3 cup dry sherry or orange juice
  • 4 medium green onions, chopped (1/4 cup)
  • 1 tablespoon olive or vegetable oil
  • 2 teaspoons prepared horseradish
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 3/4 lb pork tenderloin, cut into 1-inch cubes
  • 20 wooden skewers (6 to 8 inch)
Instructions:
  • Combine all ingredients except pork and skewers in a small bowl. Place pork cubes in a resealable plastic bag and pour half of the mixture over the pork. Seal the bag and refrigerate for 2 to 3 hours, turning occasionally. Save the remaining mixture as a dipping sauce.
  • Soak skewers in water for 30 minutes to ensure they don't burn.
  • Preheat the broiler. Line a 15x10x1-inch pan with foil or parchment paper and lightly spray with cooking spray. Remove pork from marinade, discard any remaining marinade, and thread 2 pork cubes onto each skewer before placing them in the pan.
  • Broil skewers on the top rack for 5 minutes. Flip skewers and continue broiling for another 5 minutes until pork is cooked through. In a saucepan, warm the remaining marmalade mixture until bubbly to serve as a dipping sauce.
