Brussels Sprouts and Feta Pastry Roll

Savory filling of brussels sprouts, walnuts, almonds, and feta cheese rolled in flaky puff pastry, baked golden brown for a delicious appetizer or vegetarian main dish.
Ingredients:
  • 15 Brussels sprouts, trimmed and cut in half
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons balsamic vinegar, or to taste
  • 1 teaspoon honey, or to taste
  • 0.25 cup olive oil
  • salt and ground black pepper to taste
  • 0.25 cup chopped fresh basil
  • 1 small white onion, chopped
  • 0.25 cup walnuts
  • 0.25 cup almonds
  • 1 (6 ounce) container sheep-milk feta cheese, crumbled
  • 2 (8 inch) square sheets of frozen puff pastry, thawed
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper.
  • In a saucepan, simmer Brussels sprouts in 1 inch of water until bright green and tender, about 5 to 7 minutes. Drain and cool.
  • Combine the lemon juice, balsamic vinegar, honey, olive oil, salt, and black pepper in a bowl; then, let it sit for later.
  • Transfer the cooled Brussels sprouts to a food processor along with basil, onion, walnuts, and almonds. Pulse for 15 seconds until finely chopped. Transfer the mixture to a bowl and blend in the feta cheese and lemon juice until a moist filling is formed.
  • Place the 2 sheets of puff pastry on a work surface. Split the filling in half and spread half on each sheet, leaving a 3/4 inch border at one end. Roll up each sheet, pinching the unfilled end closed. Arrange the rolls seam side down on the baking sheet.
  • Place in the oven until the top turns a beautiful golden brown, which takes approximately 20 minutes. Serve while still piping hot.
