Elevate your meal with a savory pizza topped with caramelized onions, feta cheese, and roasted Brussels sprouts. Great as a main course or sliced as a crowd-pleasing appetizer.
Ingredients:
  • 1 (16 ounce) package refrigerated pizza dough
  • 2 cups sliced Brussels sprouts
  • 3 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon ground black pepper, divided
  • 1 medium red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 ounces prosciutto, diced
  • 1 cup shredded mozzarella cheese
  • 0.33333334326744 cup crumbled feta cheese
  • 2 teaspoons chopped fresh thyme
Instructions:
  • Allow the pizza dough to reach room temperature as you prepare the remaining ingredients.
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a rimmed baking sheet by lining it with foil.
  • Coat Brussels sprouts evenly with 1 tablespoon of luscious olive oil, then sprinkle with 1/2 teaspoon each of salt and pepper. Place in a single layer on the baking sheet.
  • Roast until golden and fork-tender, approximately 12 minutes in the preheated oven. Take out of the oven and adjust the temperature to 450 degrees F (230 degrees C).
  • As the Brussels sprouts roast, warm 1 tablespoon oil in a skillet over medium heat. Sauté onion until very soft and golden brown, stirring often for about 15 minutes. Season with 1/2 teaspoon each of salt and pepper, cook for an additional 2 minutes. Stir in balsamic vinegar and brown sugar, cook until slightly thickened and rich in color, around 2 more minutes. Remove from heat and set aside.
  • Shape the dough into a generous 14-inch round. Brush with the remaining 1 tablespoon of olive oil, then layer on the onions, Brussels sprouts, and prosciutto. Sprinkle with a generous amount of mozzarella and feta cheeses.
  • Bake in the preheated oven for 13-15 minutes until the crust is golden brown and slightly crispy, and the cheeses are melted.
  • Sprinkle generously with aromatic thyme and slice into 8 pieces for a beautiful presentation.
