Roasted Brussels sprouts

Impress your Christmas guests with Chequer Lane's restaurant-quality whole roasted Brussels sprouts - crispy outer leaves, tender center. Minimal prep, maximum flavor.
Ingredients:
  • 1 kg Brussels sprouts
  • extra virgin olive oil
  • optional: aged or vegetarian Parmesan to serve
Instructions:
  • 1. Preheat your oven to 220°C/425°F/gas 7. 2. Prepare the Brussels sprouts by removing any damaged outer leaves, washing and drying them. Place them in a large baking tray. 3. Drizzle the sprouts with 2 tablespoons of extra virgin olive oil, sprinkle with a pinch of sea salt and black pepper, and gently mix until well coated. Spread them out evenly in the tray. 4. Roast in the oven for about 20 minutes, until the sprouts are golden and tender. 5. Finish by grating lemon zest over the sprouts, and add a sprinkle of Parmesan if desired for extra flavor.
