Korean army base stew with sausage, ramen, and kimchi - a spicy crowd-pleaser!
Ingredients:
  • 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), sliced
  • 14 ounces smoked sausage (such as Eckrich®), sliced
  • 1 large onion, sliced
  • 6 ounces kimchi
  • 0.25 cup Korean red pepper powder
  • 3 tablespoons soy sauce
  • 3 tablespoons gochujang (Korean hot pepper paste)
  • 5 cloves garlic, minced
  • 1 pinch ground black pepper
  • 1 bunch green onions, chopped
  • 2 (32 ounce) containers chicken broth
  • 7.75 ounces ramen noodles (such as Ottogi Ramyonsari®)
  • 1 slice American cheese
Instructions:
  • Arrange the luncheon meat into two piles on the sides of a stock pot. Top with sausage, onion, and kimchi, making sure to leave the center of the pot empty.
  • Prepare a flavorful blend of red pepper powder, soy sauce, gochujang, garlic, and black pepper in a small bowl. Then, transfer this mixture to the center of the pot. Add green onions, followed by chicken broth. Bring the pot to a boil, then lower the heat to simmer. Let the stew meld together for about 10 minutes, stirring occasionally.
  • Bring a pot of water to a boil, then add ramen noodles. Cook and stir for about 2 minutes until partially cooked. Drain and stir into stew. Continue to cook and stir for about 5 more minutes until noodles are tender yet firm. Top stew with American cheese.
