Elevate breakfast with jazzed up scrambled eggs by adding herbs or cheese. Serve with smoked salmon or avocado for a gourmet touch.
Ingredients:
  • 4 large free-range eggs
  • 2 large slices of sourdough bread
  • 1 small knob of unsalted butter or olive oil
Instructions:
  • - Crack the eggs into a bowl and remove any bits of shell using a larger piece of shell. Whisk the eggs with a fork. - Place a large non-stick frying pan over medium-low heat. - Cut slices of bread in half and toast them. - Melt butter in the pan, swirling to coat the base. - Once the butter sizzles, pour in the whisked eggs. - Gently move the eggs around the pan with a spatula, ensuring a soft, silky texture. - Turn off the heat just before the eggs are fully cooked as they will continue to cook in the pan. - Push the eggs to one side of the pan, making it easier to serve. - Spoon the scrambled eggs onto the toast. - Season with a pinch of sea salt and black pepper.
