Spicy buffalo blue cheese deviled eggs - perfect for summer gatherings!
Ingredients:
  • 1 dozen hard boiled eggs
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Buffalo sauce, such as Frank's Red Hot Sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons crumbled blue cheese
  • 2 tablespoons finely diced celery
  • Tiny cuts of celery leaf or extra celery dice for garnish, optional
Instructions:
  • Peel the hard-boiled eggs, cut them in half lengthwise, and carefully scoop out the yolks into a bowl.
  • Prepare the filling by mashing together the egg yolks, Dijon mustard, buffalo sauce, mayonnaise, blue cheese, and celery using a fork.
  • Fill the eggs: Spoon a generous portion of the filling into the hollowed-out egg whites, or pipe the mixture using a piping bag with a wide star tip. Top with celery leaves if desired. Serve the deviled eggs fresh and store any leftovers in the fridge to make delicious egg salad sandwiches the next day.
