Elevate your leftovers with this gourmet Buffalo chicken grilled cheese.
Ingredients:
  • 0.5 cup hot Buffalo wing sauce (such as Frank's® REDHOT Buffalo Wing Sauce), or to taste
  • 2 teaspoons granulated garlic
  • 2 teaspoons onion powder
  • 1.5 teaspoons freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper, or to taste
  • 1.5 cups shredded cooked chicken
  • 1 (4 ounce) package crumbled blue cheese
  • 8 slices Texas toast
  • 8 slices Monterey Jack cheese
  • 1 cup ranch dressing, or to taste
  • 1.5 cups carrot strips
  • 1 cup celery sticks
Instructions:
  • In a large saucepan over medium heat, warm wing sauce with granulated garlic, onion powder, black pepper, paprika, and cayenne. Stir occasionally for 2 to 3 minutes until heated through.
  • Add cooked shredded chicken to the seasoning mixture, ensuring each piece is well coated, and cook for 3 to 4 minutes until heated through. Then, remove from heat and gently fold in the blue cheese crumbles.
  • Stack each sandwich seductively - Texas toast first, a slice of rich Monterey Jack cheese, a generous portion of savory chicken filling, another layer of cheesy goodness, and crown it with another crisp toast, its buttered side glistening invitingly. Repeat the process to create 4 tantalizing sandwiches.
  • Cook the sandwich in a nonstick skillet on medium-low heat until the toast is browned and the cheese is melted, about 3 to 5 minutes. Watch carefully to avoid burning the toast. If the sandwich is browning too quickly, lower the heat. Flip the sandwich with a spatula and cook until the other side is golden brown, another 3 to 5 minutes.
  • Drizzle with extra wing sauce, serve with ranch dressing, carrot strips, and celery sticks on the side as desired.
