Buffalo Chicken Mac and Cheese

Spicy buffalo chicken wings paired with creamy mac and cheese for the perfect comfort food fusion.
Ingredients:
  • 2 1/2 cups uncooked elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon ground mustard
  • 2 cups whole milk
  • 2 cups shredded Cheddar cheese (8 oz)
  • Salt to taste
  • 1 cup chopped cooked chicken
  • 1 stalk celery, cut in half lengthwise, then cut into 1-inch pieces
  • 1/4 cup crumbled blue cheese (1 oz)
  • 1/4 cup Frank's™ RedHot™ Buffalo Wings Sauce
Instructions:
  • Preheat oven to 425°F. Prepare macaroni according to package instructions, ensuring not to overcook. Drain well.
  • In a 3-quart saucepan, melt butter over gentle heat. Whisk in flour and mustard until smooth. Gradually pour in milk and bring to a boil while stirring consistently. Let it boil for 1 minute until hot and bubbly. Stir in Cheddar cheese until melted and sauce is smooth. Season with salt to taste.
  • Combine the cooked macaroni with the cheese sauce, then add the chicken. Transfer the mixture to a greased 8-inch square (2-quart) glass baking dish. Top with celery and blue cheese, then drizzle with Buffalo wing sauce.
  • Bake without a cover for 5 to 10 minutes until bubbly and the blue cheese has melted. Serve right away.
