Spicy Buffalo chicken meatloaf with jalapenos, buffalo sauce, and blue cheese, made with ground chicken and sausage for a tasty twist.
Ingredients:
  • 3 links chicken sausage, or more to taste
  • 1 pound ground chicken
  • 1 bunch green onions, diced
  • 3 stalks celery, diced
  • 2 jalapeno peppers, seeded and diced
  • 0.5 white onion, diced
  • 1 cup crumbled blue cheese, divided
  • 0.75 cup bread crumbs
  • 1 cup Buffalo wing sauce, divided
  • 2 eggs
  • 0.125 teaspoon onion powder, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) while giving your loaf pan a quick spray with cooking spray.
  • Place the chicken sausage, removed from its casing, in a large bowl along with the ground chicken.
  • Prepare the green onions, celery, jalapeno peppers, and white onion by setting aside 1/4 cup of each. Combine the remaining green onions, celery, jalapeno peppers, and white onion with the ground chicken-sausage mixture and mix well. Stir in 3/4 cup blue cheese, bread crumbs, 1/2 cup Buffalo wing sauce, eggs, onion powder, salt, and pepper until everything is evenly combined, and the diced vegetables are well distributed. Transfer the mixture into the prepared loaf pan using a spatula.
  • Drizzle the remaining 1/2 cup of Buffalo wing sauce over the meatloaf and scatter the reserved green onions, celery, jalapeno peppers, white onion, and the remaining 1/4 cup of blue cheese on top.
  • Bake in the preheated oven for about 1 hour 30 minutes, or until the sides bubble and pull away from the pan. Ensure the center reaches at least 165°F (74°C) when tested with an instant-read thermometer.
