Buffalo Chicken Pot Pie with Cheddar Biscuits

Buffalo wing-inspired casserole with cheesy onion biscuits.
Ingredients:
  • 3 cups shredded deli rotisserie chicken (about 1 lb)
  • 1/3 cup Frank's® Red Hot® Buffalo Wings Sauce
  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup chopped carrot
  • 1 cup Progresso™ unsalted chicken broth (from 32-oz carton)
  • 6 oz cream cheese, cubed
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 1 cup Original Bisquick™ mix
  • 1/3 cup milk
  • 2 tablespoons sliced green onions
Instructions:
  • Preheat oven to 350°F and generously coat an 8-inch square (2-quart) glass baking dish with cooking spray. Combine chicken and sauce in a medium bowl.
  • Heat oil in a 12-inch skillet over medium heat. Cook onion, celery, and carrot for 6 to 7 minutes until carrot is tender. Stir in chicken mixture and broth, then add cream cheese cubes and 1 1/4 cups of Cheddar cheese. Stir until completely melted, then pour the mixture into a baking dish.
  • In a small bowl, combine Bisquick™ mix, milk, green onions, and the remaining 1/4 cup Cheddar cheese until smooth. Spoon 16 tablespoons of the dough over the chicken mixture. Bake without cover for 20-25 minutes until the casserole is bubbly and the biscuits are golden brown.
