Quick and delicious Buffalo Chicken Quesadillas loaded with spicy chicken, blue cheese, and red pepper sauce. Perfect with a side of blue cheese dressing and celery sticks for a satisfying meal in no time!
Ingredients:
  • 2 lb boneless skinless chicken breasts, cut in half
  • 1/4 cup Frank's™ RedHot™ Original cayenne pepper sauce
  • 6 teaspoons olive oil
  • 6 flour tortillas (10 inch)
  • 1 cup plus 2 tablespoons shredded mozzarella, Cheddar or Monterey Jack cheese
  • 3/4 cup crumbled blue cheese
  • Blue cheese dressing, if desired
  • Celery sticks, if desired
Instructions:
  • 1. Fill a large saucepan halfway with water and bring to a boil. Cook the chicken uncovered for 15 to 20 minutes, or until the juice runs clear when the thickest part is cut (at least 165°F). Transfer the cooked chicken to a large bowl and shred using two forks.
  • Drizzle the pepper sauce over the shredded chicken and mix until every piece is fully coated. Let it sit for a moment.
  • Heat 1 teaspoon of oil in a 12-inch skillet over medium heat. Place a tortilla in the skillet; sprinkle 3 tablespoons of mozzarella cheese, 2 tablespoons of blue cheese, and 1/2 cup shredded chicken on one half of the tortilla. Fold the tortilla in half over the filling. Cook for 3 to 5 minutes, flipping once, until golden brown and cheese is melted. Transfer the quesadilla to a plate and cover to keep warm. Repeat the process with the remaining oil, tortillas, cheese, and chicken.
  • Slice each quesadilla into 4 wedges and pair with creamy blue cheese dressing and crisp celery sticks.
