Spicy Buffalo chicken sliders on sweet Hawaiian rolls with melted cheese, perfect for game day or a simple family meal.
Ingredients:
  • Cooking spray
  • 1 (12-oz.) pkg. Hawaiian Sweet Dinner Rolls (such as King’s Hawaiian)
  • 6 oz. Monterey Jack cheese, shredded (about 1 1/2 cups), divided
  • 3 cups (about 11 1/4 oz.) cooked, finely shredded chicken breast, warmed
  • 1/4 cup cayenne pepper hot sauce (such as Frank’s RedHot)
  • 1/4 cup ranch dressing
  • 1 (1-oz.) envelope ranch dressing mix, divided (3 1/2 Tbsp.)
  • 2 Tbsp. (1 oz.) unsalted butter, melted
Instructions:
  • Preheat the oven to 350°F (175°C) and gather all of your ingredients.
  • Prepare a large-rimmed baking sheet by lining it with aluminum foil and lightly coating it with cooking spray. Use a serrated bread knife to carefully halve the rolls horizontally, ensuring the top and bottom halves remain connected. Place the bottom halves of the rolls, cut-side up, on the prepared baking sheet.
  • Evenly scatter 3/4 cup of cheese over the bottom half of the rolls for a melty, gooey touch.
  • In a large bowl, combine warmed chicken with hot sauce, ranch dressing, and 3 tablespoons of ranch dressing mix, stirring until the chicken is thoroughly coated.
  • Evenly spread the chicken mixture on the bottom half of the rolls, then generously sprinkle with the remaining 3/4 cup of cheese.
  • Cover the cheese with the top half of the rolls. Brush the rolls with melted butter and sprinkle them evenly with the remaining 1/2 tablespoon of ranch dressing mix.
  • Bake in a hot oven until the cheese is bubbly, the tops of the rolls are perfectly golden, and the chicken filling is warmed through, approximately 10 minutes. Take out of the oven, slice into 12 sliders, and enjoy right away.
