Spicy buffalo chicken spaghetti squash with gooey Cheddar and blue cheese, baked until golden and bubbly for a delicious cheesy indulgence.
Ingredients:
  • 1 spaghetti squash, halved and seeded, or to taste
  • 1 (4 ounce) package cream cheese, softened
  • 0.25 cup Buffalo wing sauce
  • 1 small cooked chicken breast, shredded
  • 0.25 cup ranch dressing
  • 1 cup shredded Cheddar-Monterey Jack cheese blend
  • 2 tablespoons crumbled blue cheese, or to taste
Instructions:
  • Microwave the spaghetti squash, cut-side-down on a plate, with a few small holes poked into it, until tender, approximately 10 minutes on high.
  • Place a small pot over medium-low heat. Add cream cheese and cook, stirring constantly, until melted, for about 4 minutes. Stir in Buffalo sauce until well combined, then add chicken breast and ranch dressing. Remove from heat.
  • Using a fork, remove all the squash flesh and place it in the center of each half. Top with Buffalo-chicken mixture, shredded Cheddar-Monterey Jack cheese, and blue cheese.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Broil until the cheese is golden and bubbling, approximately 5 minutes.
