Buffalo taco dip with layers of seasoned meat, taco fillings, and melted cheese, perfect for a crowd-pleasing party snack. Serve with crispy tortilla chips for dipping.
Ingredients:
  • cooking spray
  • 1 tablespoon olive oil
  • 1 pound ground buffalo meat
  • 2 (1 ounce) packets taco seasoning mix
  • 1 (14.25 ounce) can refried beans
  • 2 cups guacamole
  • 2 cups sour cream
  • 1 (6 ounce) can sliced black olives
  • 1 bunch green onions, chopped
  • 3 jalapeno peppers, chopped
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat a 9x13 inch baking dish with nonstick cooking spray.
  • In a large skillet over medium heat, sauté the onion in olive oil until translucent, for about 5 minutes. Add ground buffalo and cook for about 10 minutes, breaking up the meat as it browns. Sprinkle 1 packet of taco seasoning over the mixture and stir to combine thoroughly.
  • In a small bowl, mix the remaining taco seasoning packet with refried beans. Spread the seasoned beans in the baking dish. Layer with buffalo and onion mixture, guacamole, sour cream, black olives, green onions, jalapenos, and shredded Cheddar cheese.
  • Bake in the oven until the cheese is melted and ingredients are hot, approximately 30 minutes in the preheated oven.
