"Spicy breakfast to jumpstart your day without caffeine."
Ingredients:
  • 1 (15 ounce) can fire-roasted diced tomatoes
  • 1 (21 ounce) can BUSH'S® Sriracha Beans
  • 4 large eggs
  • 4 tablespoons crumbled queso fresco, or to taste
  • 4 (6 inch) Tortillas or tostadas
  • 1 teaspoon Sour cream
  • 1 teaspoon Sliced black olives
  • 1 tablespoon Shredded cheese of choice
Instructions:
  • Simmer tomatoes in a 10-inch skillet for 5 minutes.
  • Crush the tomatoes using a potato masher or the back of a spoon.
  • Simmer until BUSH'S® Sriracha Beans are heated through and flavors meld.
  • Create four indentations in the bean mixture using the back of a spoon or the bottom of a mug, then carefully crack one egg into each well.
  • Cook until the egg whites are firm but the yolks are still deliciously runny, around 5-8 minutes.
  • Plate each egg and generously sprinkle with crumbled queso fresco. Enjoy with warm tortillas or crunchy tostadas.
