Delicious Southern peach cobbler with buttery biscuits and flaky pie crust, just like grandma's.
Ingredients:
  • 2 (29 ounce) cans peaches
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg
  • 1 pinch salt
  • 1 (16 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury Grands!®)
  • 1 pinch ground cinnamon
  • 1 pinch white sugar
  • 1 pinch ground nutmeg
  • 1 pastry for a 9-inch pie crust
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine peaches, 3/4 cup white sugar, brown sugar, butter, cornstarch, vanilla extract, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and salt in a large pot over medium heat. Stir and cook until sugars dissolve and butter melts, approximately 5 minutes.
  • Enhance each biscuit by dusting it with a touch of cinnamon, a sprinkle of white sugar, and a pinch of nutmeg. Roll out the biscuits on a lightly floured surface. Cut each biscuit into 12 to 15 small squares, then fold them into the peach mixture. Lower heat to medium-low and gently simmer until the mixture thickens, approximately 10 minutes, stirring occasionally.
  • Pour the peach-biscuit mixture into a 9x13-inch baking dish to thicken for 2 to 3 minutes. Cover with pie crust, then aluminum foil, and place on a baking sheet.
  • Bake in the oven until the crust turns a beautiful golden brown, which should take around 45 minutes to 1 hour. Allow to cool before serving.
