Satisfy your sweet cravings with this simple and delicious Cinnamon Peach Cobbler featuring a buttery drop biscuit topping and juicy summer peaches, perfect for any time of the year.
Ingredients:
  • 1/4 cup butter or margarine
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons vanilla
  • 1/2 teaspoon lemon extract
  • 2 jars (24.5 oz each) sliced peaches in light syrup, drained, 1 1/2 cups syrup reserved
  • 2 cups Bisquick Heart Smart® mix
  • 3 tablespoons sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1 tablespoon butter or margarine, melted
Instructions:
  • Preheat the oven to 400°F. In a 4-quart saucepan, melt 1/4 cup of butter with 1/2 cup of sugar and cornstarch over medium heat, stirring constantly for 1 minute. Add 2 teaspoons of cinnamon, nutmeg, vanilla, lemon extract, and the peaches with their syrup. Bring to a boil and let it simmer for 1 minute, stirring occasionally. Transfer the mixture to a 13x9-inch (3-quart) glass baking dish.
  • Combine Bisquick mix, 2 tablespoons sugar, 1/4 teaspoon cinnamon, milk, and 1 tablespoon melted butter in medium bowl until a soft dough forms. Drop heaping tablespoonfuls of dough over hot peach mixture, then sprinkle with remaining 1 tablespoon sugar.
  • Bake for 20-25 minutes, until the peach mixture is bubbling at the edges and the topping is golden brown. Serve it warm.
