Decadent Cinnamon Roll Peach Cobbler

Decadent peach cobbler with easy, impressive cinnamon roll lattice topping.
Ingredients:
  • cooking spray
  • 1 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.5 cup butter, cubed
  • 0.25 teaspoon Georgia peach spice (such as Savory Spice Shop®)
  • 0.25 teaspoon salt
  • 2 (15.25 ounce) cans sliced peaches in juice, drained and juice reserved
  • 0.5 cup white sugar
  • 0.25 cup cornstarch
  • 1 teaspoon Georgia peach spice (such as Savory Spice Shop®)
  • 1 cup frozen peaches, thawed
  • 1 (12.4 ounce) package refrigerated cinnamon roll dough with icing
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x9-inch baking dish with cooking spray.
  • In a food processor, combine flour, brown sugar, butter, peach spice, and salt until mixture forms pea-sized crumbs. Press the mixture into the bottom of the baking dish.
  • Bake the crust in the preheated oven until it turns a beautiful golden color and is fully set, which should take around 15 minutes.
  • While the crust is baking, take a saucepan and heat it over medium heat. Pour the reserved peach juice into the saucepan and whisk in the sugar, cornstarch, and peach spice until the mixture is smooth. Let it come to a gentle boil and cook, stirring constantly, until it thickens, approximately 2 minutes. Remove the saucepan from the heat and gently fold in the canned and frozen peaches.
  • Take the crust out of the oven and allow it to cool for 5 minutes. Next, pour the peach mixture into the crust.
  • Bake until bubbly in the preheated oven for 20 minutes.
  • Combine the cinnamon rolls to make a square pastry disc, then roll it out on a lightly floured surface. Slice into thin strips using a pizza cutter and weave them together to craft a lattice topping.
  • Take the baking dish out of the oven and gently layer the lattice over the peaches. Then, raise the oven temperature to 375 degrees F (190 degrees C).
  • Bake cobbler in the preheated oven until beautifully golden, around 12 minutes. Drizzle the delicious cinnamon roll icing over the lattice crust and enjoy warm.
