Indulge in a decadent Monday treat with caramel apple cinnamon roll bread pudding.
Ingredients:
  • 2 cans Immaculate Baking Co.™ Organic Cinnamon Rolls with Icing
  • 4 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 2 tart or sweet apples, cored and thinly sliced
  • 1 cup packed light brown sugar
  • 1/4 cup caramel sauce, homeade or storebought
Instructions:
  • Preheat your oven to 375°F. Place a sheet of foil in a 9-inch square or round pan, and generously coat the bottom and sides with cooking spray.
  • Follow the instructions on the cinnamon roll cans to open them. Cut each roll into 9 pieces. Place half of the pieces in a single layer at the bottom of the prepared pan. In a medium bowl, combine eggs, milk, vanilla, cinnamon, and salt, whisking until well blended.
  • In a skillet over gentle heat, melt butter. Add apples and brown sugar, stirring to coat. Cook for 8-10 minutes on low heat, stirring occasionally, until apples are softened and mixture is caramelized.
  • Layer half of the apple mixture over the cut rolls in the pan. Add the remaining cut rolls and apple mixture on top. Pour the milk mixture evenly over everything and drizzle one packet of icing from the cinnamon rolls over the top.
  • Bake for 40 to 50 minutes until the center is fully baked and set, covering lightly with foil if the top gets too brown. Cool for 10 minutes and then spread or drizzle the remaining icing over the top, followed by the caramel sauce. Serve warm or at room temperature.
