Indulge in warm tea with delicious butter biscuits!
Ingredients:
  • 250g butter, at room temperature
  • 60g (1/3 cup) icing sugar, sifted
  • 250g (1 2/3 cup) plain flour
  • 50g (1/3 cup) cornflour
  • 9.00 gm sugar, to sprinkle
Instructions:
  • In a medium mixing bowl, use an electric beater to cream together the butter and icing sugar until pale, creamy, and well combined, occasionally scraping down the sides of the bowl.
  • Combine the flour and cornflour over the butter mixture, beating on low speed until just combined. Use floured hands to form the dough into a disc, then wrap it in plastic wrap and chill in the fridge for 45 minutes until firm enough to roll.
  • Preheat your oven to 160°C as you prepare 3 baking trays lined with non-stick baking paper.
  • Roll out half of the dough on a lightly floured surface to 1cm thickness. Use a 3cm biscuit cutter to cut out the biscuits and place them on lined trays. Re-roll any leftover dough as needed. Press a 3mm-deep cross on top of each biscuit using the end of a clean ruler. Lightly sprinkle sugar over the biscuits.
  • Bake in a preheated oven for 20 minutes, swapping the trays halfway through, until light golden and cooked through. Let the biscuits cool on the trays after removing them from the oven.
