Irresistibly versatile butter biscuits perfect for any occasion, ready to impress at a moment's notice.
Ingredients:
  • 125g unsalted butter, cubed, at room temperature
  • 80g (1/3 cup) caster sugar
  • 4.40 gm vanilla essence
  • 115g (3/4 cup) self-raising flour
  • 100g (2/3 cup) plain flour
  • 41.20 gm milk
Instructions:
  • Prepare 2 baking trays with non-stick baking paper or use non-stick trays. In a medium bowl, use an electric beater to combine the butter, sugar, and vanilla essence, scraping down the sides of the bowl as needed, until just mixed.
  • Combine the sifted flours with the butter mixture in a bowl using a wooden spoon until well mixed. Stir in the milk until fully incorporated.
  • Incorporate the rest of the sifted flours. When the dough becomes tough to mix with a wooden spoon, switch to using your hand. Knead the dough by hand until it forms a soft dough that pulls away from the sides of the bowl and is not sticky. If the dough seems slightly dry, add an additional 1 tablespoon of milk to ensure there are no dry patches at the bottom of the bowl.
  • Shape the dough into tablespoon-sized balls and space them 4cm apart on the lined trays.
  • Gently press down on the biscuits with a floured fork, dipping it in flour as needed. Alternatively, use a floured hand, the base of a glass, or a decorative edge to flatten and add patterns. Chill the trays in the fridge for 20 minutes.
  • Preheat your oven to 160°C. Bake the biscuits for 18-20 minutes, rotating the trays halfway through, until they rise, develop a slight crack on top, and turn light golden underneath. Allow the biscuits to cool for about 3 minutes, then transfer them to a wire rack to cool completely using a spatula.
