Stained-glass tree biscuits

Elevate your holiday table with stunning stained glass Christmas cookies.
Ingredients:
  • 250g butter, softened
  • 161.25 gm caster sugar
  • 8.80 gm vanilla extract
  • 750.00 ml plain flour
  • 2 x 200g packets fruit drop boiled lollies (see note)
Instructions:
  • Preheat the oven to 170C/150C fan-forced and line 4 baking trays with baking paper.
  • With an electric mixer, whip together butter, sugar, vanilla, egg, and 1 tablespoon of cold water until the mixture is light and fluffy. Transfer the mixture to a large bowl, then mix in the flour. Turn the dough onto a lightly floured surface and knead gently until it comes together. Divide the dough in half, shape each half into a disc, and wrap them in plastic wrap. Chill in the refrigerator for 45 minutes.
  • Roll out the dough between sheets of baking paper until 5 mm thick. Cut out one large Christmas tree shape using an 8cm cutter. Cut a smaller tree from the center using a 4.25cm cutter. Re-roll scraps and repeat. Place a lolly in the center of each tree. Bake one tray at a time for 7 to 8 minutes until lollies are melted and biscuits are firm. Let them sit on the trays for 10 minutes before transferring to a wire rack to cool.
  • Prepare the remaining dough disc with the lollies and serve.
