Honey biscuits with shiny lolly centers, perfect for Christmas tree decorations.
Ingredients:
  • 1 x 300g pkt boiled lollies
  • 200g butter, at room temperature
  • 70g (1/3 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) honey
  • 300g (2 cups) plain flour
Instructions:
  • Prepare two baking trays with non-stick baking paper. Sort the candies by color into separate sealable plastic bags. Wrap a tea towel around one bag multiple times. Crush the candies using a hammer or meat mallet until finely crushed. Repeat the process with the other bags.
  • In a bowl, use an electric beater to whip together the butter and sugar until light and creamy. Then, mix in the honey until well combined.
  • Combine the flour using a round-bladed knife, mixing with a cutting motion until just combined. Then, use your hands to bring the dough together. Transfer the dough onto a well-floured surface and knead lightly until smooth. Divide the dough into 2 portions, cover, and refrigerate for 30 minutes to rest.
  • Preheat the oven to 180°C. Roll out the dough with a lightly floured rolling pin until it is 4mm thick. Use a 9cm star-shaped biscuit cutter to cut out stars from the dough. Place the stars on prepared trays. Use a 4cm star-shaped cutter to cut the center from each biscuit. Using a thin drinking straw, make a small hole in the top corner of each biscuit. Repeat the process, re-rolling the dough as needed.
  • After baking the biscuits for 6 minutes, fill the star-shaped hole in each biscuit with crushed lollies, using a different color for each. Bake for an additional 6 minutes or until the biscuits are golden and the lollies have melted. Let them cool slightly, then transfer them to a wire rack to completely cool. Repeat the process with the rest of the dough and lollies.
  • Secure a ribbon on each biscuit by threading it through the hole and tying a knot to fasten.
