Stained-glass Christmas trees

Create stunning stained-glass cookies by filling holes with crushed candies and baking until melted, revealing beautiful windowpane designs as they cool.
Ingredients:
  • 125g butter, softened
  • 150g caster sugar
  • 1 Free Range Egg
  • 300g plain flour
  • 76g pkt Brand Lollipops (red and green lollipops only)
Instructions:
  • Preheat your oven to 180C and line 2 baking trays with baking paper.
  • With an electric mixer, whip the butter and sugar in a bowl until light and creamy. Incorporate the egg until just mixed. Fold in the flour. Transfer the dough to a floured surface and knead until smooth. Chill wrapped in plastic for 15 minutes or until firm in the fridge.
  • Gently detach the lollipops from the sticks, then place the red and green candies into individual plastic bags. Crush them finely using a rolling pin.
  • Roll out the dough on a lightly floured surface to a 3mm-thick disc. Cut the dough into triangle shapes to resemble trees and use small round cutters to create holes in each tree. Place on lined trays and bake for 7-8 minutes until lightly golden. Fill each hole with crushed lollies using a spoon, then bake for another 2 minutes until the lollies melt and the biscuit is golden. Let cool completely on the trays.
