Special sugar cookies with hidden hard candies peeking out.
Ingredients:
  • About 15 brightly colored hard candies (ring-shaped, rectangular or round)
  • 1 cup butter or margarine, softened
  • 2/3 cup sugar
  • 1/2 cup light corn syrup
  • 2 teaspoons vanilla
  • 1/4 teaspoon lemon extract, if desired
  • 3 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon baking powder
Instructions:
  • Preheat the oven to 350°F and line cookie sheets with parchment paper. Place each color candy in separate resealable plastic bags, seal the bags, and use a rolling pin to coarsely crush the candy. Set aside.
  • In a large bowl, use an electric mixer to beat together butter and sugar until light and fluffy. Mix in corn syrup, vanilla, and lemon extract. Then, on low speed, slowly add flour, baking powder, and salt until combined.
  • Separate dough into two equal parts. Roll out each portion on a floured surface until it is 1/4-inch thick. Use a 3-inch Christmas tree-shaped cookie cutter to cut out the dough. Place tree shapes 2 inches apart on baking sheets. Optionally, re-roll any remaining dough and fill the tree shapes with about 1/2 teaspoon of crushed candy.
  • Bake for 8 to 10 minutes until edges are lightly golden brown and candy is melted. Allow cookies to cool on the baking sheets for 8 minutes. Using a metal pancake turner, gently transfer the warm cookies from the foil to cooling racks. Let them cool completely, roughly 15 minutes, before storing in loosely covered containers.
