Make vibrant stained-glass Christmas cookies for a festive gift.
Ingredients:
  • 300g pkt boiled lollies
  • 200g butter, at room temperature
  • 70g caster sugar
  • 80ml golden syrup
  • 300g plain flour
  • 1 tsp vanilla bean paste
Instructions:
  • Preheat your oven to 180°C and prepare 5 baking trays with parchment paper.
  • Sort lollies by colors and place each color in its own plastic bag. Cover with a tea towel and crush the lollies finely using a rolling pin or meat mallet.
  • Beat butter, sugar, vanilla bean paste, and golden syrup with an electric mixer until pale and creamy. Stir in flour using a round-bladed knife in a cutting motion until dough forms. Knead gently on a lightly floured surface until smooth. Divide into 2 portions, cover with plastic wrap, and chill in the fridge for 30 minutes.
  • Roll out the dough portion on a floured surface to create a 4mm-thick disc. Cut stars using an 8cm cutter and place 6 biscuits on a lined tray. Use a 4cm cutter to remove the centers. Make a small hole in the top of each biscuit using a thin straw.
  • Bake the biscuits for 4-5 minutes, then fill the star-shaped hole in each one with crushed lollies. Bake for another 4-5 minutes until the biscuits are golden and the lollies have melted. Let them cool on the tray and repeat with the rest of the dough and lollies.
  • Decoratively lace colored ribbon through the hole in each biscuit for enhancement.
