Stained glass biscuits

Use 7cm shaped cutters and a 4cm cutter to create fun window cut-outs.
Ingredients:
  • 1 clementine
  • 100 g unsalted butter (cold)
  • 180 g plain flour
  • 50 g caster sugar
  • ½ teaspoon ground cinnamon
  • 1 tablespoon milk
  • 12 coloured fruity boiled sweets
Instructions:
  • Preheat your oven to 180°C/350°F/gas 4 and line 2 baking sheets with parchment paper. Finely grate the clementine zest. In a mixing bowl, combine butter, flour, sugar, clementine zest, and cinnamon. Rub the mixture with your fingers until it resembles fine breadcrumbs. Stir in the milk to form a soft dough. Wrap the dough in clingfilm and refrigerate for 30 minutes to firm up. Separate the sweets by colors into sandwich bags, remove the air, seal the bags, and crush them with a rolling pin. On a floured surface, roll out the dough to 1cm thickness. Cut out shapes with large cutters and place them on the baking sheets. Use smaller cutters to create a hole in the center of each biscuit. Sprinkle crushed sweets in the holes. Use a cocktail stick to make a hole at the top of each biscuit for hanging later. Bake for 12 minutes until golden and the sweets are melted. Cool on a wire rack, then thread with ribbon and hang on the tree. Enjoy!
