Stained-glass window biscuits

Candy adds a beautiful stained glass look to these cookies.
Ingredients:
  • 125g butter
  • 99.00 gm icing sugar
  • 4.40 gm vanilla essence
  • 500.00 ml plain flour
  • 20.00 ml granulated sugar
  • 1 egg white, lightly beaten
  • 10 fruit-flavoured drops
Instructions:
  • Preheat your oven to 180°C or 160°C fan-forced. Line 2 baking trays with non-stick baking paper. Use electric beaters to mix butter and icing sugar until light and creamy. Then, add vanilla and egg, and continue beating.
  • Use a knife to blend in the flour until it's well mixed. Shape the dough into a ball, then transfer it onto a non-stick baking paper. Flatten and roll the dough to a 5mm thickness.
  • Cut star shapes from dough using a 9cm-wide biscuit cutter, making sure to cut the shapes close together to maximize yield. Gather and lightly press together dough scraps, then gently roll out again to cut out more shapes. Repeat this process to utilize all the dough.
  • Place the biscuits on the trays. Use a 4cm-wide star cutter to cut out the centers and set aside. Brush with egg white, sprinkle with sugar, and bake for 5 mins.
  • Crush lollies by placing them in a snap-lock bag, using one color at a time. Wrap the bag in a tea towel and gently hit with a hammer on a hard surface.
  • Take the trays out of the oven. Fill biscuit centers with 1 level teaspoon of brushed lollies. Bake for an additional 5 minutes. Let them cool on the trays for 15 minutes, then move them to a wire rack to cool completely.
