Make enchanting edible snow globes with stained glass windows, glistening snowflakes, and twinkling Christmas trees - perfect for a white Christmas. Prepare a day in advance.
Ingredients:
  • 1/2 x 100g packet ready to roll green icing
  • 1/2 x 180g block white chocolate, chopped
  • 40.40 gm thickened cream
  • 125g butter, chilled, chopped
  • 375.00 ml plain flour
  • 356.90 gm caster sugar
  • 1 egg
  • 1/2 tsp vanilla bean paste
  • 1 egg white
  • 225.00 gm pure icing sugar, sifted
  • Teal food colouring gel
  • 1/2 tsp confetti sprinkles
  • 229.35 gm glucose syrup
  • 40.00 ml snowflake sprinkles
  • 20.00 ml white sprinkles
  • 50g white ready to roll icing
Instructions:
  • Smoothly knead the green icing on a flat surface. Roll it out between 2 sheets of baking paper until it's 3mm thick. Cut out 8 Christmas tree shapes using a 4.5cm cutter, reshaping any excess trimmings as needed. Place the trees on a baking tray lined with parchment paper. Allow them to set overnight or until they are firm and dry.
  • In a microwave-safe bowl, combine chocolate and cream. Microwave on HIGH for 1 minute, stirring with a metal spoon halfway through until melted and smooth. Chill in the refrigerator for 2 hours until thick and spreadable.
  • In a food processor, combine butter, flour, and 1⁄3 cup caster sugar until mixture resembles fine crumbs. Add egg and vanilla, then process until just combined. Transfer dough to a floured surface, knead until smooth, shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  • Preheat your oven to 170°C/150°C fan-forced and line 2 large baking trays with baking paper. Roll out the dough between 2 sheets of baking paper to 8mm thick. Using an 8cm round cutter, cut out 8 rounds from the dough, then place them on one tray. Next, use a 6cm round cutter to cut out a small round from the center of each large round and place them on the second tray. Re-roll the trimmings, cut out 8 more rounds, and add them to the second tray.
  • Bake ring-shaped biscuits at 180°C for 10-12 minutes until light golden. Let them cool on a wire rack for 5 minutes. For round biscuits, bake at 180°C for 12-15 minutes until light golden. Let them cool on a wire rack.
  • Whisk the egg white in a large bowl until frothy. Slowly add icing sugar, continue whisking until the mixture is smooth and well combined. Set aside one-third of the icing in a separate bowl and mix in teal food coloring. Cover the surface of the remaining white icing with a damp paper towel. Fill a piping bag fitted with a 2mm plain nozzle with the white icing. Pipe small dots onto the trees following a picture as a guide. Decorate with confetti, gently pressing to adhere. Allow the icing to set for 30 minutes. Save the white icing in the piping bag for later use.
  • Arrange half of the ring-shaped biscuits on a baking tray lined with parchment paper. In a 4-cup glass jug, mix 1/3 cup glucose syrup, 1 1/2 teaspoons water, and the remaining 2/3 cup caster sugar. Microwave on HIGH for 1 minute. Stir well, then microwave for an additional 2 minutes until the mixture is clear and bubbling. Allow it to settle for 30 seconds. Pour the toffee into each biscuit to half-fill, then top with a tree, snowflakes, and white sprinkles. Repeat to make a total of 4 snow globes. Make another batch of toffee with the remaining ingredients for the remaining 4 snow globes. Decorate them and let the snow globes set for 30 minutes until firm.
  • Drizzle 2 teaspoons of luxurious white chocolate ganache onto half of the round biscuits and top with the remaining biscuits to create delectable sandwich cookies.
  • Transfer the teal icing into a piping bag with a 2mm plain nozzle. Use the photo as a reference to pipe the icing onto the snow globe biscuits. Sprinkle with snowflakes and white sprinkles for decoration. Allow to set for 2 hours before serving.
  • Smooth the white ready to roll icing by kneading it. Shape it into 8 sausage shapes measuring 2cm in size. Add a small amount of white icing on top of a ganache-filled biscuit. Place a piece of the sausage-shaped icing on top and press gently to secure it. Following the picture as a reference, press a snow globe biscuit lightly into the icing, holding it firmly to ensure it stays in place. Pipe more white icing on the biscuit to cover the sausage-shaped icing and create an 'icicle' effect. Sprinkle snowflakes and sprinkles on top. Repeat the process to make a total of 8 snow globes. Let them stand for 2 hours or until they set. Serve and enjoy!
