Winner winner butter chicken dinner for two!
Ingredients:
  • 500g chicken thigh fillets, fat trimmed, cut into large pieces
  • 28.00 gm butter chicken curry paste
  • 1/2 tsp garam masala
  • 1-2cm piece ginger, grated
  • 1/2 lime, rind finely grated & juiced
  • 250ml chicken style liquid stock
  • 1/2 x 400g can diced tomatoes
  • 20.00 ml cashew nut spread/butter
  • 20.20 gm light cream, optional
  • Fresh coriander leaves, to serve
  • Steamed rice, to serve
  • Thick yoghurt, to serve
Instructions:
  • In a large bowl, mix the chicken with the curry paste and garam masala until well combined. Let it sit for 5 minutes.
  • In a large pan over medium-high heat, heat the olive oil until shimmering. Add the chicken, garlic, ginger, and lime rind. Sauté, stirring often, for 4-5 minutes until the chicken is lightly browned.
  • Add the stock and tomatoes to the pot, then bring the mixture to a boil. Lower the heat and let it simmer, uncovered, for about 20 minutes until the sauce thickens.
  • Combine the lime juice, cashew spread, and cream (if using) until warmed.
  • Garnish the butter chicken with fresh coriander leaves and steamed rice. Add a dollop of thick yogurt, if desired.
