Butter Cookies with Buttercream Frosting

Delicate butter cookies that are perfect for decorating or simply enjoying with a sweet vanilla buttercream topping.
Ingredients:
  • 1 egg
  • 2 tablespoons whole milk
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 9 cups powdered sugar, divided, or more as needed
  • 1.5 tablespoons vanilla extract
  • 9 tablespoons evaporated milk, or more as needed
Instructions:
  • In a large bowl, whip together butter and white sugar until creamy. Incorporate egg, milk, and vanilla until smooth.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet ingredients until a smooth dough forms. Cover and chill the dough in the refrigerator for 2 to 3 hours.
  • Preheat your oven to 400 degrees F (200 degrees C) and generously dust a pastry cloth or kitchen towel with flour.
  • Divide the dough into thirds and roll each part to 1/8-inch thickness on the pastry cloth. Use cookie cutters to create shapes and transfer them onto baking sheets without greasing.
  • Bake the cookies in the preheated oven until they are just lightly browned, which should take about 5 to 8 minutes. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • While the cookies cool, make the frosting: In a bowl, whisk together 3 cups powdered sugar, butter, 9 teaspoons evaporated milk, and vanilla until smooth. Slowly add the remaining 6 cups of powdered sugar and mix until combined. Beat on high speed until the frosting is fluffy. Adjust the consistency by stirring in more evaporated milk or powdered sugar as needed.
  • Spread a luscious layer of frosting over the cooled cookies.
