Create a flaky, buttery pie crust from scratch for the perfect pastry.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.5 cup butter, diced and then chilled
  • 0.25 cup ice cold water, or as needed
Instructions:
  • Assemble all ingredients.
  • In a large bowl, mix the flour and salt together. Add chilled, diced butter and use a pastry blender until the mixture looks like coarse crumbs.
  • Gradually incorporate 1 tablespoon of cold water at a time into the mixture using a spatula or your hands until the dough forms, adjusting as needed to potentially use less than 1/4 cup of water.
  • Form the dough into a round disc, wrap it in plastic wrap, and chill in the refrigerator for a minimum of 4 hours or overnight.
  • Roll out the chilled dough on a well-floured surface into an 11-inch circle, dusting your rolling pin with flour as necessary.
  • Roll the dough gently onto the rolling pin, then unroll it over a 9-inch pie dish. Press the dough evenly into the bottom and sides of the dish. Trim any extra dough and flute the edges for a beautiful finish.
  • Follow the blind-bake method or proceed with filling and baking according to your pie recipe's instructions.
