Buttered t-bone steak with tomato salad

Butter-seared steak with side salad - simple and mouthwatering.
Ingredients:
  • 450g thick-cut beef T-bone steak
  • 9.20 gm olive oil
  • 50g butter
  • 5 sprigs thyme (optional)
  • 2 cloves bruised garlic (optional)
  • 400g heirloom cherry tomatoes, room temperature, chopped
  • 1 chilled cucumber, peeled, thinly sliced
  • 62.50 ml flat-leaf parsley leaves
  • 50g marinated goat’s feta
Instructions:
  • Season the steak generously with salt and pepper on both sides, allowing it to rest for at least 30 minutes to 1 hour until it comes to room temperature.
  • Preheat a sturdy cast iron pan over high heat. Combine oil and 10g of butter in the pan and heat until the butter is foaming. Place the steak in the pan and sear for 4 minutes per side until a rich brown crust forms.
  • Add the rest of the butter, thyme, and garlic (if using) to the pan and let it bubble. Tilt the pan to gather the butter on one side and drizzle over the steak, basting continuously for 1 minute until lightly browned. Allow the steak to rest for 10 minutes.
  • As the steak rests, combine tomatoes, cucumbers, and parsley in a serving bowl. Sprinkle with crumbled feta, drizzle with 1 tbsp of the feta's marinating oil, and season to taste.
  • For two servings, carve meat from both sides of the T-bone and slice into 1cm strips against the grain. Drizzle with delicious browned butter and enjoy with a fresh tomato salad.
