Buttermilk bran pancakes with poached winter fruit

Cozy up with a nutritious twist on classic pancakes this winter!
Ingredients:
  • 150g (1 cup) self raising flour
  • 40.00 gm caster sugar
  • 60g All-Bran Fibre Toppers
  • 2 eggs, lightly beaten
  • 250ml (1 cup) buttermilk
  • 4.40 gm vanilla extract
  • Canola oil spray, to grease pan
  • Light natural yoghurt, to serve
  • 250ml (1 cup) fresh orange juice
  • 1 cinnamon stick
  • 200g mixed dried fruit (such as apricots, prunes, peaches)
Instructions:
  • In a medium saucepan over medium heat, combine orange juice, sugar, and cinnamon. Stir until sugar dissolves, then bring to a boil. Add dried fruit, reduce heat, and simmer for 5-10 minutes until fruit is tender and syrupy. Remove from heat and let cool.
  • In a large bowl, sift the flour. Mix in the sugar and half of the All-Bran Fibre Toppers. Add the eggs, buttermilk, and vanilla. Whisk until the mixture is well combined and smooth.
  • Preheat a non-stick frying pan over medium heat and coat with canola oil spray. Pour 60ml (1/4 cup) of batter for each pancake into the pan. Cook for 2 minutes until bubbles form on top. Flip and cook for another minute until done. Keep warm on a plate while making the remaining pancakes.
  • When ready to serve, place two pancakes on each plate. Add a dollop of natural yoghurt, poached fruit, syrup, and sprinkle with the remaining All-Bran Fibre Toppers.
