Moist bran muffins with buttermilk and raisins, a tasty fiber-rich treat for all!
Ingredients:
  • 1 cup buttermilk
  • 1.5 cups wheat bran
  • 0.66666668653488 cup brown sugar
  • 0.33333334326744 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 cup raisins
Instructions:
  • Assemble all of your ingredients.
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • Combine the wheat bran and buttermilk in a large bowl and allow it to sit for 10 minutes.
  • Whip together brown sugar, oil, egg, and vanilla in a separate bowl until fluffy; then fold into the buttermilk mixture.
  • Combine flour, baking soda, baking powder, and salt by sifting together. Mix into buttermilk mixture until just combined. Gently incorporate raisins; fill the muffin cups 2/3 full with the batter.
  • Bake in the oven until the tops spring back when lightly pressed, for 15-20 minutes. Allow to cool in the tin briefly, then transfer to a wire rack to cool completely. Enjoy your delicious treat!
