A modern twist on classic pigs in a blanket for a healthier choice.
Ingredients:
  • 1 package (14 oz) turkey breakfast sausage links (14 links)
  • 1 cup Fiber One™ original bran cereal
  • 1 cup Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 2 tablespoons canola oil
  • 1 egg
  • 1 3/4 cups fat-free (skim) milk
  • 1 teaspoon vanilla
  • 1 cup reduced-calorie maple-flavored syrup
Instructions:
  • Follow package instructions to cook sausages. If needed, spray an electric griddle or skillet with cooking spray and heat over medium heat (350°F).
  • Crush cereal into fine crumbs by placing it in a resealable bag and using a rolling pin, meat mallet, or food processor.
  • Combine the cereal, flour, sugar, and baking powder in a large bowl. In a separate small bowl, whisk together the oil and egg. Pour the egg mixture, along with the milk and vanilla, into the flour mixture, and stir until fully blended.
  • Pour a fluffy 1/4 cup of batter onto the sizzling griddle for each pancake. Cook until it puffs up and is filled with bubbles, then flip and cook until golden brown on the other side.
  • Wrap each succulent sausage in a fluffy pancake, securing with a toothpick and then drizzle with sweet syrup before serving.
