Paleo-friendly twist on classic pigs in a blanket: eggs wrapped in sausage.
Ingredients:
  • 2 teaspoons salt
  • 2 teaspoons dried sage
  • 1 teaspoon ground black pepper
  • 0.125 teaspoon ground turmeric
  • 0.125 teaspoon dried marjoram
  • 2 pounds ground pork
  • 1 tablespoon butter, or more as needed
  • 8 eggs
Instructions:
  • In a bowl, combine salt, sage, black pepper, turmeric, and marjoram. Place pork in a separate bowl, sprinkle the salt mixture evenly over the pork, mix well to combine. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously coat eight 8-ounce ramekins with delicious butter.
  • Form the sausage mixture into 8 equal-sized balls and gently press them into individual ramekins, making a small well in the center of each. Carefully crack one egg into each sausage well.
  • Cook the dish in the preheated oven until the sausage is fully cooked and the eggs are firm, which should take about 30 to 40 minutes.
