Buttermilk Fried Chicken Wings

Spicy buttermilk marinated fried chicken wings, perfect for parties.
Ingredients:
  • 0.5 large white onion, chopped
  • 8 cloves garlic, crushed
  • 2 tablespoons Sriracha hot sauce, or to taste
  • 2 teaspoons ground black pepper
  • 2.5 cups buttermilk
  • 4 pounds chicken wings
  • 2 cups all-purpose flour
  • 2 tablespoons kosher salt
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon lemon zest
  • 1 tablespoon ground black pepper
  • 3 teaspoons dried oregano
  • 3 teaspoons cayenne pepper, or to taste
  • 1 teaspoon dried sage
  • 1 teaspoon dry mustard
  • 8 cups peanut oil for frying
Instructions:
  • In a large bowl, mix together onion, garlic, hot sauce, salt, and 2 teaspoons black pepper. Stir in cold buttermilk until dissolved. Trim wing tips with kitchen shears if desired. Add chicken wings, ensuring they are thoroughly coated in buttermilk. Cover and refrigerate for at least 2 hours, or up to 4 hours.
  • Whisk together flour, kosher salt, paprika, garlic powder, onion powder, lemon zest, black pepper, oregano, cayenne, baking powder, sage, and dry mustard to make seasoned flour. Drain excess buttermilk, coat wings in the seasoned flour, and place them on a wire rack.
  • Allow the wings to rest for 10 to 15 minutes.
  • Heat peanut oil in a deep-fryer or large saucepan until it reaches 375 degrees F (190 degrees C).
  • Gently add the chicken wings into the hot oil, a few at a time. Fry until they are golden, crispy, and cooked through, which should take about 5 minutes. Place the wings on paper towels to absorb any excess oil and sprinkle lightly with salt while they're still warm. Repeat with the rest of the wings.
