Buttermilk-marinated chicken wings coated in cayenne, garlic, and thyme breading, fried to crispy perfection.
Ingredients:
  • 2 cups buttermilk
  • 4 pounds chicken wings, split and tips discarded
  • 3 cups all-purpose flour
  • 1 cup crushed saltine crackers
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground dried thyme
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 4 cups peanut oil for frying
  • salt to taste
Instructions:
  • In a mixing bowl, whisk together eggs and buttermilk until smooth. Add chicken wings, mix well, cover, and refrigerate for 30 minutes. In another large mixing bowl, combine flour, crushed crackers, pepper, thyme, cayenne pepper, salt, and garlic powder.
  • Heat oil until it reaches 350 degrees F (175 degrees C) in a deep-fryer or large saucepan.
  • Remove the chicken wings from the flavorful buttermilk marinade, and discard the rest. Let the excess buttermilk drip off the wings, then coat them with crunchy bread crumbs.
  • Fry the chicken wings in batches until golden brown and fully cooked, about 10 minutes per batch. Drain on paper towels and season with salt before serving.
