Kid-friendly buttermilk pancakes with caramelised pears - a fun and tasty treat for the whole family!
Ingredients:
  • 187.50 gm self-raising flour
  • 40.00 gm caster sugar
  • 260.00 gm buttermilk
  • 1 egg
  • 1 medium corella pear, unpeeled
  • 20g butter, melted
  • 16.00 gm brown sugar
  • 53.60 gm golden syrup
  • 4 small scoops vanilla ice-cream
Instructions:
  • In a bowl, whisk together flour and sugar. Create a well in the center. In a separate jug, whisk buttermilk and egg. Pour the buttermilk mixture into the flour mixture and whisk until smooth. Let stand for 10 minutes before moving on.
  • Cut the pear into quarters lengthwise and remove the core. Slice each quarter into 6 thin slices.
  • Preheat a large non-stick frying pan over medium heat and brush with butter. Spoon 1/4 cup of batter into the pan, spreading to create a 1cm-thick round. Place 3 pear slices on top of the pancake and sprinkle with brown sugar. Cook for 2-3 minutes until bubbles form, carefully flip, and cook for another 2-3 minutes until caramelized. Transfer to a plate, pear-side up, and loosely cover with foil to keep warm. Repeat with the remaining batter, pear slices, and brown sugar to make a total of 8 delicious pancakes. Brush the pan with butter between batches.
  • Serve the pancakes on plates, generously drizzle with golden syrup, and top with a scoop of ice cream.
